Joey Barton when he left Newcastle. I know there's conjecture about who snubbed who but the mostly accepted story is Tony Pulis received a phone call advising him not to proceed. Very smoke and mirrors what really happened but the transfer fell through on the day it was supposed to happen and then he went to QPR. Barton was exactly the kind of midfielder we needed at the time. He was an absolute shithouse on the pitch, with bags of unrecognized talent and in that dressing room, he would have thrived. He knew how to be cynical and he knew how to carry his team mates when needed. He subsequently tormented us in multiple games. He always seemed to play well against us and picked up several wins while playing for QPR AND Burnley and every one of them pissed me off immensely. All I really wanted was for him to have signed for us. Scott Parker was a snub that really ground my gears at the time. I've utterly hated him ever since and never understood why our fanbase didn't rip him a new arsehole for years to come. We were the only team interested in him for weeks. West Ham were freshly relegated, going nowhere, had a ridiculous high asking price and we offered good money. He came out with some cock and bull story about loving West Ham and really wanting to rebuild the club and spearhead their promotion campaign. Spurs showed a tiny amount of interest at the end of the window as a panic buy and he was publicly handed in a transfer request, a couple of days before the window closed... "SAVE MEEE, SAVE MEEEEEE FROM THE BOWELS OF A SHITTY MEDIOCRE CHAMPIONSHIP CLUB". Absolute wanker.
