I've played in Florida at Orlando and Naples/ Fort Myers areas but it wasn't a specific golf holiday, I took a half set of clubs with me and booked a A la carte Fly drive holiday, it's a great place to play, I was there around October time.
I watched Sandy Lyle playing in Orlando and got talking to him and his caddy (very nice guys), they gave me some tips on which courses to play.

Sounds like you need advice on every aspect of the holiday! Get a price from a tour operator for the package. Then try and do it cheaper yourself! When I was living in the UK I always did it myself. For car rental - www.netflights.com/For Villa rental - www.homeaway.com/ www.vrbo.com/For Golf - There are several places that do discount tee times. Just ask google!

Played at 2 of the Disney courses, Palm and Eagle Pines . They are not cheap but do a price slice where you tee off after a certain time and get it half price. If you book early and take the first or second tee time after the prices are half price you will get round. Hope you are not affraid of aligators, they are allover the place. As you would expect there is water everywhere., Know a few golfers who have played in South Carolina, courses everywhere and might be a cheaper option than Florida.
