I lived in Bruges for 4 years and visit family there every year, so I guess I'd have to say.... Bruges
When you going exactly?
Spend a day or two exploring Bruges, then hire some bikes if the weather's good and cycle to the coast following the canals (only 20km / 1 hr along traffic-free lanes) via picturesque Damme to Knokke-Heist (posh resort) or for sthg more authentic Zeebrugge. Walk along the beach, have a Duvel or Leffe in the sun followed by some mussels & chips or freshly caught fish.
In Bruges, spend an evening sampling some of the best beers in the world in De Garre, a great watering hole near the Markt / post office - they also have Piraat 10.5 on draught, although you're only allowed 3 as it's bloody strong stuff! www.lestaminetbrugge.be at Park 5, a tavern that's over 100 years old with a cosy atmosphere, decent pub grub and friendly locals (open till late; closed Monday). Another good local pub with great Leffe on draught is the "Hollandse Vismijn" on Vismarkt - friendly locals, cosy atmosphere. De Republiek Café, St Jakobsstraat 33, is a lively place in a cultural centre with a terrace in summer.
For food, try De Wijngaard on Wijngaardstraat near Minnewater Park for v. good steaks; there's also a really good bakery / cake shop in the same street called Detavernier-Carpe Diem with a nice little terrace to the rear for coffee and cake. A good place for sampling wine is Est Wijnbar, Noordzandstraat 34, really friendly owner, Sunday evenings live music. Whatever you do, avoid the overpriced bars and restaurants on the Market Square / Markt, they really are rob dogs!

Christophe, Garenmarkt 34. Bistro, always busy, great food & good Chilean house wine. Where a lot of local chefs head after their shift to eat.
In Den Wittenkop, Sint-Jakobsstraat 14. Excellent Flemish dishes (Vlaamse stoverij, bouillabaisse), good music, friendly owners. Reservations recommended.
De Schaar, Hooistraat 2. Classic-modern food (grilled fish & meat a speciality), v. nice terrace overlooking a canal.
Restaurant Malsherbes, Stoofstraat (just off Katelijnestraat). Reasonably priced, tasty French cuisine, only a few tables.
De Stoepa, Oostmeers 123,

't Apertje, Damse Vaart Zuid 223, on the way to Damme on the right of the canal. Great seafood, esp. the eel in chervil sauce

Near the Market Square, Riva del Sole, Wollestraat 22, is the place to go for the best pizza in town:

If you're coming from Northern France try to make a detour to a place called Westvleteren near Ieper to sample arguably the best beer in the world at Sint-Sixtus Abbey - Westvleteren 12. It's also the region where hops are grown. There's a cafe within the monastery grounds called In De Vrede where you can sample the trappist beers:
www.indevrede.beCheck their opening times if you plan to visit as they're rather unusual. You can also buy 6-packs of the beer to take home with you in the shop. There's also a wonderful beer restaurant 15 mins away from here in Watou well worth a visit called Het Hommelhof -
www.hommelhof.be They use lots of local beers in their cooking, plus really friendly owners. Closed Mon, Tues & Thurs evening and all day Wednesday. Reservations recommended.
Finally, if you have time visit the First World War battlefields around Ieper.
