As someone born n bred in STOKE-ON-TRENT, you'd think that making Oatcakes would be second nature wouldn't ya ? ??? You'd think that your Mum MADE you make Oatcakes as a kid & you'd get a thrashing off your Dad if they were crap ? But, who makes them, at home, every day ? ??? Blimey, i'd better start aving a go. ;D Carry on our heritage. ;D MMmmmmmmmmmmm bacon, cheese, tomatoes,...........gotta go! ;D

The reason that not everyone makes them is because those who have a recipie never let anyone else know it I suppose. But you're right, keep the tradition alive.

here goes.
to make 12 or so decent sized oaties you will need:-
1. 8oz fine or medium oatmeal 2. 8oz plain or wholemeal flour 3. 1 teaspoon salt 4. 1/2oz live yeast 5. 11/2 pints warm milk and water mixed together (ie 3/4 pint milk mixed with 3/4 pint water, then warmed in the microwave 6. 1 teaspoon sugar
steps:-
1. mix together the flour, oatmeal and salt in a big bowl. 2. dissolve the yeast in a little bit of the warm milk/water mix and then add the sugar. wait until the mixture goes frothy. 3. add the yeast mixture to the dry ingredients then add the rest of the warm milk/water mix to make a batter. prob best to use some sort of a hand blender to mix it up properly and make a smooth batter. 4. cover the bowl with some clingfilm then leave it in a warm place (top of radiator, airing cupboard, etc) for an hour or so (in this time, the mixture will probably rise and go frothy and your house will start to smell like a boozer). 5. cook on a non stick frying pan as you would a pancake. the first one or two will probably turn out shite but the next ten will be fine.

My house is no more than 40 yards as the crow flies from a shop in Leek that makes them and the smell some mornings is out of this world, I might do a poll to find out if any posters DONT like them.

We make them down here in Devon for us and extended family. Ashbournpotters recipe is more or less what we use down here for realy good home made oatcakes. Just a couple of tips:
1. Best to use fine oatmeal and not medium. Definitely not coarse.
2. The time that you allow the mixture to stand is critical to the taste and texture. If you leave it too long then the oatcakes will taste strongly of yeast and not long enough will result in texture like pancakes. The yeast should create the texture without affecting the taste.
Basically experiment but they are well worth it.
