It all began not Friday last but twice again. A somewhat impromptu visit from my girlfriend's family. Unequipped and ill prepared for it as we were, sojourning at the pub seemed the logical choice .
What played out there is hazy but uneventful. Nevertheless all the conversations that would flourish with frequent contact were condensed into a single revelrous evening.
The next morning it was mild but persistent hangovers for all. As host, twas my duty to alleviate. To the shops, for goods of the breakfast variety.
The bread we had so into my basket went the familiar eggs, the versatile sausage, the harmonising beans, the texture bringing hash browns and of course, the all important bacon. Mushrooms I summised were too controversial.
At home I cooked, we dined, I washed. I noticed a consistent leftover rashers or two to each plate. Thinking nothing of it at the time I assumed it was the cooking. But no it was crispy in all the right places yet tender to touch.
Only this morning, as I prepared the much scaled back, bacon sarnie, did it occur to me; Her family are blue baconers. Unsmoked! Instinctively, I'm smoked.
I'm now told, by the converted Mrs, that most folk are bluers and that smoked is a taste that one has to acquire. Is she right?.

I'll tell you what it is.... it's shite.
My gf has come home once or twice from the supermarket with unsmoked bacon bits for me use in carbonara, and it always causes a discussion.
I.E. Why did you buy the flavourless version when the smoked one is right next to it? Can't you read? Are you blind? Get back there now or pack your bags, etc.

Uncooked is fucking minging, and I think dangerous to your health? (Like all uncooked pork)
Like mine crispy rind but not too leathery texture. Red sauce. Melted cheese optional.

My Grandmother used to tell me that you eat what you are given and be grateful for it. She was a terrible cook but that stuck with me. As such, I eat both.

Had a mate stay with me years ago, I was busy making breakfast, got a pack of sausages out of the fridge, when I came to cook them there was 2 missing, I was completely bemused, I knew I'd got a full pack out of the fridge, turns out he'd eaten them raw 🤮 Did it quite often apparently, never did him any harm 🤷 Bacon, don't really care whether it's smoked or not.

Occasionally, I'll buy a slab of pork belly and put it on the smoker for 2-3 hours. Try to avoid the nitrates from commercially produced bacon unless I'm in the mood for a BLT. No rules when that craving hits. Has the BLT been invented in England yet?

If only I had the motivation, skillset and confidence to do my own!

Never heard of blue before, only ever been green or smoked, latter being the better and always from a reputable butchers and dry cured. Supermarket stuff is pumped full of saline solution.
