Because the pitch is a mix of real and synthetic grass (plastic)
I've played on it, without water its really sticky and slow.

Slightly, but not much, off topic….in Waddos biography Director of a Working man’s ballet, John Leonard writes that Waddo would soak the pitch before games in dry weather in order to slow the game down which suited his style of play. He would call in the local fire brigade before games to do this.

He would call in the local fire brigade before games to do this. He got them in before the Easter Monday title decider v Liverpool in 1975. Largely because Hudson was tentative on harder pitches because he'd broke his ankle a few years before
