For me white every time.
The only function bread has in a sandwich is to transport the contents from plate to mouth. The bread should play little or no part in the taste experience. Unlike oatcakes, which add to the experience, brown bread just diverts the senses away from the main object of tasting the filler. Who would dream of bacon and cheese on brown?
Maybe each brown loaf should carry a warning? May seriously damage you eating experience.

For me it is a matter of taste and what complements what.
I like brown bread for ham sandwiches and white bread and butter with fish and chips, for example.
I once knew a chemical engineer who had a PhD and did his thesis researching the texture of bread for Rank Hovis McDougall. Studies had shown that most people choose a bread for its texture in the mouth, not taste. His research was to determine the factors affecting the texture of the bread, which is all to do with the "air bubbles" in the bread.

It’s a matter of digestion for me, a doctor once pointed out to me that white bread is basically a hard lump of fat, only eat any type of bread on rare occasions but never white.
Oatcakes for me.

Seeded wholemeal. Wholemeal bread is far better for the digestive system . I used to hate wholemeal bread but after having a section of duodenum removed 3 years ago due to cancer I find white bread very difficult to digest and it can quickly block me up so was forced to either give up bread or switch.

I always go by the content, the ingredients, the nutrition levels when I buy any type of food, not the taste.

Having taken on healthy eating a few years back my beloved oatcakes are a thing of the past as I could only ever have them with melted cheese. I’m a flatbread or tortilla man now. Used to be granary.
