I used to love outside cooking but times have changed. One of my neighbours is on the case right now and I must admit it does smell good.

Probably because I'm hungry. I've got a home made Bolognese sauce on the go to die for. I think the breeze is in the right direction.

Chuffed, how about you use the Bolognaise sauce for an Italian chilli dog? In the US they put chilli con carne on hot dogs and it's then a chilli dog. The sausage can of course be barbequed.

BBQuers are a selfish smelly lot. They do it in hot weather so folks who most likely have windows or doors open have to suffer it. And folks clothes on washing lines will probably have to be washed again. My wife mentions getting one every now and then and I just say use the flipping kitchen oven or a George Foreman and take it outside. That's what a kitchen is for!

If you are using charcoal, say on a Weber kettle, you should cook chicken indirect with a drip pan underneath. Start your coals, put them on both sides of the kettle (or whatever), put the chicken in the middle with no coals directly underneath them and put the lid on the kettle. Perfect way to roast whole chickens......throw some branches of rosemary on the coals to add a bit of a smoke taste.

I was in Melbourne with my ex and son some years ago visiting her uncle over the Christmas period. He barbecued the turkey very nicely. Half way through the process there was a huge hail storm, didn't stop him from standing with an umbrella in his back yard tending the thing.

I was given an infra red bbq a couple of years ago for Father’s Day. Best move ever, the meat doesn’t burn and can stay on the grill for as long as you like. Just keep tuning it and slamming the remains of the marinade on it..

They run a perfect 225 degrees F and are an amateur's best bet to get authentic BBQ. A bit pricey at the initial purchase but professionally cooked Que isn't cheap, even here in Meatlandia. You can fake it with a Weber Kettle if you cook indirect but it will require a lot of attention over many hours.

Our next door neighbour has had a bbq tonight and it smells as though he's using old tyres instead of charcoal ! Goodness knows what the food tastes like after it's been cooked over that smell.

Had my kids and grandkids round today BBQ , homemade lamb sweet chilli kebabs , grill chicken with Nando's lemon rub . Cooked in a low oven and finished on hot barbie . Burgers for the kids , jobs a good n 👌
