Went to my local market this morning and the French cheese factor had one of my fave French cheeses , bleu de causses , hardly ever see it anywhere similar to Roquefort , salty and strong made with cows milk though . From Corsica

A good one is nice ....but in my experience in Spain you can get some pretty iffy stuff .....best to seek out a farmers type market if you want a good one

Old Amsterdam - 12 year old matured Gouda. An orange cheese with a black wax rind, these days freely available at Tesco or Waitrose deli counter. Very moreish if you like a nice nutty cheddary taste, and want to be entertained by the serving wench's attempts to cut a wedge with the cheesewire.
