Keep it clean lads Cheshire for me, i find a lot of supermarket ones too rubbery, add a bit of sliced apple, oh yessss. As a daily one though, a nice medium cheddar does the job, again not supermarket nonsense though. Having said that , Sainsbury's were doing samples of cheddar with bits of chocolate inside the other week, very nice as a one off.

Shropshire blue is quality on crackers, on oatcakes I'd go for cheddar or cheshire or a mixture of the two!

Red Leicester's good on butties or that Wendsleydale stuff with fruit in Cheddar on oatcakes. (no brainer) Crackers or biscuits, any really. I like cheese.

Marks and spencer do a strong cheddar called Cornish cruncher which is very good, also available with chilli bits in, nice and fiery.
