Currently on Vodafone and looking to move to BT Mobile.
So, BT have several Sim only deals, some advertised as BT EE and some as BT. The guy I spoke to said that the BT EE ones use the EE mobile network but the BT ones use the BT mobile network and you don’t have access to EE coverage??
But online various articles say they use the same network, can anyone shed any light for me?

As I understand it EE are owned by BT - as is Plusnet - they don't have their 'own' network as such - they all operate on the EE network - just have slightly differently tailored contracts.
