In light of the recent end of the world due to coronavirus and life seemingly stopping, I've taken up cycling as a way to pass the time/keep fit.
Now before all the drivers pipe up about cyclists on the roads, I avoid road cycling (because cyclists on roads annoy me as well at times especially when they seemingly cycle in the middle of the road for no apparent reason) I've been cycling along the canal to Stone and back which is a relatively easy steady route but having done it a few times I'm getting bored of it.
Are there any other cyclists out there who can recommend some other local-ish cycling spots/routes that don't really involve road cycling?

It's good to hear you're enjoying cycling along the canal. It can be very scenic. I rarely travel along the towpath nowadays as I seem to pick up punctures.
There's a lot of good routes. If you Google cycle routes in Staffordshire there are some really good ones listed

You can extend your Stone canal route a little by getting onto the path that runs alongside the Trent from the Vic to Hanford, its pleasant and easy and you'll have it to yourself. Or follow the canal to Etruria and branch off to follow the Cauldon Canal through Milton and Stockton Brook to Cheddleton and eventually Froghall. From Norton Aldi you can follow the Chatterley Whitfield paths through Biddulph and eventually to Congleton And Beyond. The Chatterley spoil heap has paths spiraling around it and the view at the top shows you what a green city we have, aswell as views of the superb CW colliery site. Most of the old Knotty railway in the north of the city is cyclepath, an interesting way of getting round, you're never quite sure where you are. From Pittshill it extends along old railway to Kidsgrove. From Newcastle Town's ground you can follow the Lyme valley way to the town, with a bit of road through the town you can get onto a cyclepath from the Brampton to Silverdale, where you can cycle round a network of paths around The Void. You can branch off at Cross Heath and follow a cyclepath through Chesterton to Apedale Country Park (lots of winding hilly paths) and keep following that railway towards Miles Green.
These are all pretty flat and easy.

I use the Komoot App. You can plan your own route. The thing I like about Komoot is that it has 4 different maps for you to switch between and you can easily plan a route that uses only minor roads or cycle ways and bridlepaths. Up to you. There are also existing routes uploaded by other cyclists. They are indicated by a red circle with a bike. Click on these and you can incorporate these routes into your ride. Some of these routes will also have photos of the route associated with them. Komoot also tells you what kind of surface you are cycling on and allows you to identify steep hills (if you want to avoid them). There are other cycling apps that do similar things but I like Komoot the most. www.komoot.com/discover

Just wish they'd get rid of those stupid fucking barriers along the canal that mean you have to stop in order to squeeze your bike through. It was bad enough with my old bike, but now I've gone and treated myself to a new one, with 780mm handlebars, it's even worse.

Nantwich to Audlem full of the buggers who think they own the roads riding side by side having a natter, then there’s some old bloke on a trike who I always get stuck behind, but thinking about getting a bike myself, seen a nice one in a bike shop in Audlem

It may even be safer for cyclists AND motorists in certain circumstances. However, I am aware that this does get the more impatient motorist a little agitated, especially since the Highway Code is a little bit vague on some points re. side by side riding.
