Same here still looking for that “one fool proof” recipe and directions I’m even considering a 4 hour round trip to high lane at the weekend. Being in exile everything is new and great, but then the things you take for granted.... are gone and it’s shit. The fucking weirdos around here even call a bap a cob... like really you bunch of mongies I lived for a year in Nottingham back in the 80s. Didn’t really like it. Moved to Newark and lived there for the next 16 years before settling in Lincoln, which is better than both put together. Trouble is, it’s added another half an hour on to my journey to and from Stoke games and stocking up on oatcakes and meat and tater Wrights pies. I’m stuck here for atleast 10 years as business dictates, but when I’m done with that I’m off to mid wales on a small holding and generally avoiding people lol,

It must be the only town in England that’s quieter on Saturdays than it is on Sundays. The latter attracts the tourists and antique shop browsers.

following this thread me and the current future ex mrs flea79 decided to have a go at this last night and had no luck really, we ended up making pancakes or crumpets basically, we managed one oatcake that was slightly acceptable, and the taste just wasnt there but that could be the cooking we will keep experimenting Same here still looking for that “one fool proof” recipe and directions I’m even considering a 4 hour round trip to high lane at the weekend. I/We make our own using blended Porridge oats. There are numerous recipes on the Internet. The recipe we use is 100 gms strong white flour 100 gms Whole meal flour 225gms Porridge oats blended in blender 1 Tea spoon dried yeast 1 Tea spoon salt 1 pint of water added gradually whilst mixing. When fully mixed cover with damp cloth and leave for a min of 4hrs, stirring occasionally. Imediatly prior to cooking add 1Tea spoon baking powder. Use a flat base pan very hot with a LITTLE oil and add the batter using a ladle and tilting the pan to get the required shape. Flip over after 60/90 secs. Makes about 12 cakes. Enjoy EDIT. When you are ready to put them in the pan the mix maybe a bit thick. If so add small amounts of more water or milk. I’m giving this recipe a go tonight can you tell me you don’t use milk?

I don’t normally use any milk, and a small amount at the end will probably make little difference. Having seen other posts on here I am going to try using warm water which hopefully will speed up the fermentation. Also may use a LITTLE more yeast as an experiment. Athens skill and enjoyment is in the ladling of the batter into the pan. Get a wrist action going to spread it out. If you make a mess of the first few don’t worry, everybody does!!😀 Let us know how you get on.⚓️

It allows the Yeast to ferment. It will start to bubble, which is good. Already got the second batch on the go.... I will wait lol The first batch warm water and 2 hours, I did add another 250mls of water just before starting as the mix seemed quite thick, I got 10 out of it, the first was too thick (hence the additional water) but the rest, especially the last 5 or so are spot on! Feel look and taste like the old country.

There's such a thing as "Derbyshire Oatcakes" apparently. Kicked up a storm on social media from Stokies recently. Have you tried Derbyshire Oatcakes? I feel dirty just saying it...

Well finished making the batter an hour a go just stirred it and it looks ready to go (I did use warm water) but I will resist for now Give it the full 4 hrs. This definitely plus we use 50/50 tepid milk/water and a tbsp of baking powder stirred in just before you cook them. This gives them the bubbles texture. Never had a failure.

Do any shops ship to New Zealand? An old school friend has started doing them in Perth in Oz.

I know each to there own and all, but how anyone can rate them things I never know (surely must never have had any from a proper oatcake shop)
