God knows why I'm asking you lot but here goes -
I've got a steady job but it pays well below the market rate and the number of different things I'm expected to do has grown and grown to the point where I'm practically running the show but still only being paid what I was on when I started.
Do I
Keep quiet and just look round for a move or try and talk about it with the boss (not the most approachable of managers)?

I would say do both! Have a word with your boss, and look out for something else! You cant let anyone take advantage of your good nature, and it sounds like thats whats happening with your wages!

Don't let anyone take the piss out of ya mate. Make sure ya getting paid what ya should be. There's too many managers taking the piss in the workplace today (I sound like David Brent )
